Countryside Cookbook
A fully new edition to our Wild-Camping section in this our attempt at ensuring that none of us starve whilst living the dream touring in our converted T4's and T5's, often we are led to believe that the cookers in many converted vans are only meant for making a "cup of tea" or a bowl of soup on but this just is not the case it is perfectly possible to easily make full meals, on your two rings and in some cases grill, be ready to be totally amazed and shocked at exactly what you can achieve, the choices are endless as you will quickly find out below.
As the weeks and months go on, we are sure this list will turn into a valuable resource to all T4 and T5 Transporter owners, if for nothing else as picnic ideas away from the normal snadwisches and cans of Coke.
Breakfast
Omelletes
Whisked eggs with milk and fry in a pan couldn't be easier
Ingredients
Eggs [2 for each person]
Milk
Salt
Pepper
Filling if desired
Oil for frying
Preperation
Simply whisk all the eggs together with the milk season to taste, place 2 tablespoons of oil into frying pan, when boiling pour mixture into frying pan, allow to cook for a couple of minutes, then add your filling if desired, fry off until golden brown and serve with fresh buttered bread, easy quick and wholesome breakfast to start the day with
Fillings can be whatever you have, small bits of cooked bacon, ham, cheese, tomatoes, mushroom, onion again the list is endless, another recipe we have used often and enjoy

Dinner
Campfire Mince And Tatties
Ingredients
4 medium potatoes, peeled and sliced 1/2 medium onion, diced 1 lb mince 1/4 cup water salt and pepper to taste aluminium foil
Preperation
Add water to mince and mix well. Add potatoes, onion and seasoning. Mix well. Separate into 3-4 servings. Wrap in double-thickness aluminium foil. Place seam side up on medium hot grill or open fire for 40 minutes,turning often.Open carefully. Season and Serve with ketchup. brown sauce, soya sauce and a whole host of other combinations to suit your tastes

Indian Flatbread
large, round, fried bread that is delicious with butter and jam.
Ingredients
5 cups all-purpose flour 2 tablespoons baking powder 1 1/4 teaspoons salt 1 1/2 tablespoons melted butter 2 cups milk oil for frying
Preperation
Place the pre-sifted ingredients in a large bowl. Melt the butter and add it to the milk. Add the milk and butter mixture, a little at a time, to the dry ingredients, beating until the dough becomes stiff. Sprinkle the remaining flour on a pastry board, or other flat surface and knead lightly until all of the flour is worked in. Roll the dough into 3 circles about 1/8 inch thick and 10 inches in diameter. Heat 3 to 4 tablespoons of oil in a 10 inch frying pan. When the oil is hot, fry each bread until crisp and light brown on both sides. Serve hot, with your choice of topping the combinations are endless.
Try sliced banana, jam, just butter, honey, melted cheese, pate, cold meats choclate spread the list is as long as your imagination really try it next time your away weekending it in some forrest somewhere, what better way to enjoy wild-camping than to sit with a fresh hot coffee, and a free hot flatbread of your choice, you just cant beat it

Desserts
Banana Paradise
Ingredients
Bananas, Small marshmallows, Chocolate chips, Peanut Butter
Preperation Hold the banana with ends pointing upward. Carefully slice a "flap" out of the skin only. Start at stem end and go to other end. Leave the flap attached. Pull the sides a bit so banana is loose in skin. Spread with small amount of peanut butter then place desired amounts of chocolate chips and marshmallows tucked inside the skin along side banana. Fold the skin flap back over and wrap in foil. Cook under grill for a few minutes to melt chocolate + marshmallows.
NOTE: leave out any of the toppings or substitute for another to suit your desired taste. try butterscotch chips (Dime bars broken up) or leave out the peanut butter. Also good with just peanut butter and a little cinnamon. Very messy, but graet fun and ever so dellightful
